Simply One Pot - Herbal Fish

It's always a pleasure to cook especially if it's something completely fuss-free yet nutritious! We are building a habit of healthy eating and one of the best form of meat is white meat therefore fish is a natural preferred choice!

We are all busy mommies and if you have very little time and are totally zapped of energy after a whole day's work, whether you are a sahm or a wahm or a full-time working mom, I think the last thing you want is to agonize over what to cook, and then if you'd need to slave in the kitchen for over 2 hours in order to serve piping hot & delicious meal for your family.

You might want to give this dish a try...
Simple ingredients needed. I bought 2 slabs of fish fillet from the supermarket (love it that it doesn't have BONES!)
After rinsing the fish fillet, rub some pepper, salt and a small amount of mixed herbs onto the fish fillet (on both sides).
Heat up a table spoon of olive oil and fry it for 2 mins each side on medium high heat.

Voila!!! Simple, but superbly tasty, if I may say so myself! :)

Celebrating their differences

My children, they are as different as day and night. Besides the obvious difference of being a boy and a girl they are completely wired differently ;) It's something I have always been grateful for even though it drives me crazy sometimes.
Little Missy, the spunky and feisty little one; she's full of life and fun... a social butterfly and one whom I've observed to be into the arts - singing and dancing. One definitely with better EQ than her brother ;)
Little Man, he's a dreamer, a builder, charmer (to his mom - *ahem* yours truly)... creative in his own little ways. Definitely more academically advance than his sister - ie. the one with better IQ.

One interesting and observable difference between the two of them is the way they eat.
This was Missy's plate of chicken rice after 5 mins into eating her lunch.
And this was Little Man's plate of chicken rice, 5 mins after eating his lunch. It's something I have always laughed about - their eating habits.

Regardless of their differences, I am glad to have them as my children. They have taught me too much about life and what it takes to be a mother. It's definitely a privilege!

Dusting away the "cobwebs"

I cannot believe it that it's been months since I last posted an entry in this blog that I found myself logged out of my own blog account because of a wrong password!?!?!

I've been procrastinating about posting in this space simply because I often wonder if people really bother to read about the mundane things in my life as a sahm (or should I say, I am a wahm now)... places I bring my kids to... the growing pains of my children... the struggles I have as a parent etc etc etc...

Then I recalled why I started this blog since almost 6 years ago. It was a record of my journey as a mom, an archive of the growing years of my children... a place where I will and eventually my children will read about how the process of their growing up years as well as their mom's motherhood stages was like in the past.

I've left almost 6 months of year 2011 "empty" ie. no records of any sorts of our treasured moments... recently I've come across many new mommies in the blogosphere and their stories have so inspired me to start the records of my treasured moments all over again.

I shall then, keep this space filled up so that in time to come it serves as a journey down memory lane for myself and my children.

If you will join me as I start to "pen-down" the events of our lives all over again, I'll definitely be delighted! :)
