The "Assessment"

*Long Post*

We've received a preliminary assessment for Tim. In my previous post about the challenges that we've been facing dealing with Tim - being a concerned parent (read: kiasu), I was quick to jump into trying to pinpoint what was wrong and be given a label that describe my child's problem, so I could find a solution to resolve this problem quickly (task oriented parent).
I was getting anxious due to his teachers' complaints, friend's concerned word of caution, and my imagination of the worst about my child's future due to what I have learned about the situation. I couldn't be very objective about the steps I should take to help my child overcome all these challenges. I was just too caught up with all the signs and symptoms I've picked out of Tim's behaviour and matching them to that of a special need child. For one moment, I imagined him to be ADHD, and in another occasion, I thought he has stronger signs of being down with Asperger and the last I jumped into was ASD, after the preliminary assessment by the OT.

In the process of running around trying to put my finger to a problem, and seeking for a solution, I've overlooked the fact that my child is afterall a preschooler who is at an age of being curious, exploration, adventure... just as God has made us all different, each child has a different learning style, grows at a pace of their own and progress with a different cognitive level... I should embrace the uniqueness of Tim and recognize that this challenging period is God's way of reminding me how much I needed Him in my process of parenting Tim (and Little Missy), and if I should sought for any form of help it is He whom I should look up to.

I've had the assurance from hubby, and many close friends (who have encountered special needs children) who feedback that they don't see Tim as a special need child... all he needed was to be properly guided in different social setting as well as classroom rules... granted that he may be disruptive in class and caused his teachers much heartaches and headaches, he still desires to please the adults around him (especially us, his parents).

Over the past weekend, I've made a point to observe Tim's behaviour more intently. When playing with his sister I noticed he was indeed playing WITH and not parallel playing. He was also seen playing quite well with his friend in the Sunday School. He has taken my instructions and followed them accordingly without much fuss. I noticed much of his behaviour was a reaction of how I behave as a parent towards him. When I was calm in instructing him, he was calm as well... when I started yelling, he has a tendency to act up. Just as the adults dislike being interrupted when we are focused on a task, it is likewise with Tim. So the meltdown that occur in class often was due to his focused attention on an activity being disrupted; I am aware though, the teachers have a time table to observe in school and cannot allow every child to do everything as they like. This is something I am willing to work together with the teachers to help Tim by reinforcing the message that he has to follow the class rules and time table.

With Tim, I know I have to work a lot harder and put in more patience in guiding him properly. I've seen improvements in Tim lately ie. lesser tantrums and quicker to quieten down after a tantrum as I've taken a more active step in setting boundaries, more importantly, I've taken a more conscious effort to yell less at him and to guide him by reasoning instead of reprimanding. I've also made a point to give him more positive attention rather than negative.

Given the time I know Tim will grow to become better... he might take a slightly longer time but I know, by the grace of God, it's not impossible for us to overcome all these challenges together.

Simply One Pot - Peanut Porridge

What do you cook that's one pot, totally hassle-free and suitable for rainy days?
Porridge, of course!!! *smile* I love cooking porridge cos it's completely fuss-free and absolutely quick to whip up!

I love my porridge with chilli that explains why you see it in my bowl of mush... *wink* On days, when I just totally do not wish to wash up loads of pots and pans, and when I totally have ran out of ingredients in the refrigerator (yet too lazy to go for grocery shopping) this is what I will cook!

Today, the ingredients I have in my stash are a pack of minced chicken meat, frozen scallops and a pack of peanuts... so without much prep work, I made sure the minced chicken and frozen scallops were defrost, washed and dump everything into the crock pot... can't get anything easier than that... *grin*

Here's the ingredients -
100gms minced chicken meat (or minced pork)
4-5 pieces of fresh scallops (optional, though I thought that kind of enhance the taste of the porridge)
50gms dried peanuts (soaked. Quantity in moderation according to your preference)
1/2 cup rice (I used mixed grain rice but you may just use white rice)
Fish sauce or soya sauce (in moderation according to your preference)

Method of preparation -
1) Boil the rice in 4-5 cups of water in a saucepan till you notice the rice is cooked
2) Pour the entire lot of rice (with the water, add more water if need be), and all other ingredients (except fish sauce) into a crock pot and leave it to cook for up to 3hrs+
3) Once it's cooked to the consistency of your preference you may add a moderate amount of fish sauce to taste and stir evenly.
4) Add the condiments of your choice (eg. spring onions etc) and a dash of pepper. serve!

*Note: if you want the porridge to taste better you may use chicken stock or stock boiled from sweet corn instead of plain water.

Simply One Pot - Chicken & Vege Omelette

This is a great one-dish meal to whip up, anytime, when you want a hassle-free preparation. Best of all it's nutritious (contains fibre & protein all in one) and at a very low cost :)
I first come across this dish one day when I was invited for lunch at a dear friend's home. I was curious how this simple dish was so yummy and asked for the recipe so that I may try to replicate the goodness to my loved ones at home :) it was a really popular dish between my kids...

Here's how you can prepare it too...

Ingredients -
3 eggs (beaten)
100gms minced chicken
1/2 pack of green vegetables (boiled; you may use baby cai xin or spinach)
Soya sauce
Pepper
Corn starch
Cooking oil

Methods of preparation -
1) Marinate minced chicken in 2 tsp soya sauce, some pepper and 1 tsp corn starch, set it aside
2) Boil the green vegetable and chop it
3) Add the minced chicken and chopped vegetable into the beaten egg and stir lightly
4) Add 1 tsp soya sauce into the mixture
5) Heat oil on fry pan and fry the omelette in medium low heat (to prevent the egg from burning before the meat is cooked).
6) Serve with steam rice

HFMD hits home!

Since packing the kids to school, I've been pre-warned of the kids' susceptibility to diseases that spread around the confined environment which are packed with young children... well I sent the kids off with my eyes wide opened...

HFMD hit us last week and honestly, I wasn't even prepared for this as it has never occurred to me that the disease will hit home. Just last year, I laughed to scorn where reports of HFMD being an epidemic during certain times of the year, and smirked that my kids were homeschooled and therefore have been spared from the danger of being exposed to the disease. Now that I've been hit, I realized how "evil" I was to have scorned and smirked, felt truly bad that this was no joking matter at all.
Little Missy was down with the pesky disease and was home bound for an entire week. During this time of rest, it was like a nightmare - only thing was the nightmare lasted for a whole week!

I only discovered that her throat area was infested with tiny ulcers that caused her great pain hence she's been drooling a lot refusing to even swallow her own saliva. We had thought it was only a strep throat that she's down with and was hoping that she'll recover in just a couple of days... more puny little red/white spots started to appear under her tongue, and within just a day, more ulcers began to sprout out like wild mushrooms... I've lost count of them totally!

As you can imagine, how it must have felt with a mouth-full of ulcers (I probably would become cranky and whine in pain just like Little Missy did)... fluids was her cure for as we've found out from the HPB that there's no medicine that could rid the disease except for the body to recover on its own. The wait for recovery was painful because having to care for a sick child, and run around all the meals preparation, the laundry and some basic washing was seriously not fun at all... however, to my surprise, I handled it all to my stride and had lots of patience to spare during this period (all praise goes to my Heavenly Father).

Little Missy was dopey most of the time as she hardly ate any solids, she was only willing to drink ribena and honey drink during, I relented, and could only try to ease her discomfort as much as possible. She watched loads of Hi-5 videos during the past week... the only program that could captivate her in front of the telly beyond 30mins.

Throughout the process of recovery, I was just thankful that I was given the time to be with Little Missy on a one-to-one basis. I was also grateful that I could be there for her and to comfort her when she needed me most... I won't be able to do the same had I been a FTWM.

The day when she started to ask for chicken rice, I knew the usual Little Missy was back... and with a vengeance for she ate like she's never ate before, her appetite was so good that it amazed me :)

This episode had taught me not to take little things for granted and had also taught me to never scoff at others misfortune but to truly empathize and also be prepared because it could hit anyone of us when we least expect it to!

Simply One Pot - Macaroni Soup

As a SAHM without a live-in helper, I would need to effectively use the limited time that's on my hands... after a month or two of adjustment, I finally decided to prepare more one-pot meals during the week as opposed to cooking the traditional 2 dish + 1 soup meals. This means less oil, less cleaning to be done.

One of our all time favourite one-pot meals is this super easy yet tasty & healthy meal!
A way to make a nice naturally sweet soup base is to include this cob of corn (珍珠玉米). It's uniquely sweet, rather different from the ordinary sweet corn we get from the market.
All I need to do is to dump all the ingredients (except the prawns & macaroni) into the soup pot; bring to a boil then simmer for over an hour.
Top it with your favourite garnish and voila a delicious and healthy meal!

Ingredients:
2 chicken thigh
1 chicken carcass (bones)
2 cobs of corn
2 carrots, cut (optional)
200gms prawns, shells removed
Green Vegetables (optional)
Cooked macaroni

Method of preparation:
1) Place chicken thigh, chicken carcass, corns, carrots into a pot of water. Bring to a boil and simmer for an hour over. Once chicken thigh is cooked, remove from the soup and tear the meat and side it aside for later.
2) Cook macaroni (boil in water for 12-15mins), set it aside for later.
3) Cook green vegetable, prawns (boil in water), set it aside for later.
4) Place macaroni, green vegetable, prawns and chicken meat into a bowl.
5) Once the soup is ready add 2 tbsp soya sauce to taste; pour it into the bowl of macaroni
6) Top it with chilli and spring onions

Let's Get Outdoors!

One of the activities that we missed most after the kids were packed into school was taking time for a nature's walk regularly... (was wondering if Tim's behaviour was a result of Nature Deficit Disorder)...

Anyways, we were happy to have brought the kids to the Botanic Garden (Cluny Road entrance)... we usually prefer using this entrance as it's quieter and more parking space available...however, we weren't quite happy about the huge construction of the Botanic Garden MRT station going on...Nevertheless, the kids had loads of fun exploring and running around the place...
Tim discovered a spider web in the drain and was taking a closer look...
Anyone game for some foot reflexology? Amazing how the kids don't feel the pain at all...
The lake was covered with a film of oil and dirt... poor swans must have suffered from all this filth...
There's just so much to explore when we are outdoors...
Nature sparked a child's imagination and creativity!
So much in nature that involved V.A.K. elements for the kids to play and learn in...
The best thing of all that running, exploring, discovering, playing and learning... was the kids' energy were all maxed out... *grin*... what better way than that to enjoy a day that's filled with fun!
