Simply One Pot - Chicken with Ginger Sauce

It's been an extremely long while since I last shared a recipe post. That's because I've been preoccupied with lots of activities around my children and on MyPlayschool.

Last night, while I was in Facebook, something caught my eye, someone shared a new recipe in her blog and out of curiosity I took and look and as one thing led to another, a chicken dish triggered my craving for the Samsui Chicken. Decided that I'll make this the one-pot dish for dinner the next day.
Samsui Chicken was made popular by the Soup restaurant here and it's interesting to note the history and origin of this dish was by the Samsui women of yesteryears.

This dish is so easy to make that you could whip it up even when you don't have any culinary skills ;) The ingredients required are so readily available. You can imagine my joy when there was no trace of chicken meat and lettuce left on the plate after dinner tonight *wink*

Here's how you could prepare this dish too.
Preparing the Chicken - Ingredients
1.5kg fresh chicken (I bought a kampong chicken from the supermarket)
1cm of young ginger
1 bulb of garlic (individual cloves crushed)
2 tbsp sesame oil
1 tsp salt

Method of preparation
1) Boil a large pot of water and add ginger and garlic
2) Once the water starts to boil, place the whole chicken into the pot
3) Ensure that the water covers the entire chicken, turn down the heat and continue to simmer for 25 minutes
4) Cease fire and leave the chicken in the pot for another 20 minutes
5) Remove the chicken and place it into a pot of ice water. Set it aside for 15 minutes
6) Lift the chicken out and place it onto a plate; rub salt and sesame oil all over the chicken and inside the cavity.
7) Place the chicken into the fridge to cool for 2 hours (I've omitted this step)
8) Cut the chicken into desired chunks and place the meat onto a plate
9) Serve with ginger sauce and ice berg lettuce

Preparing the Ginger Sauce - Ingredients
50gm young ginger
50gm old ginger
3-4 cloves garlic (skin removed)
45ml sesame oil
1 tbsp rice wine
1 tsp salt
1 tsp sugar
2 tbsp vegetable oil

Method of preparation
1) Blend ginger, garlic with vegetable oil and sesame oil till fine
2) Mix it in a small bowl with the rest of the ingredients
3) Leave the mixture aside to stand for 2 hours
4) Serve with chicken and ice berg lettuce

oh...the dish looks nice...the tantalizing aroma of the ginger will bring up the taste...
