Simply Homecooked - Simply Fried Rice

Ingredients -
Corn Kernels
Chinese sausages - cut into cubes
Green peas
Carrots - cut into cubes
Long Beans - cut into small pieces (optional)
Prawns - shelled and deveined
1 Egg beaten
4 shallots (or red onions)
4 cloves of garlic
2 red chilli
1 small piece of ginger
White Rice

Method of preparation
1) Pound shallots, garlic, ginger and chilli and set it aside
2) Fry beaten egg
3) Fry prawns (2/3 cook and set it aside together with the fried egg)
4) Fry the pounded ingredients for 1-2mins
5) Fry all other ingredients till cooked
6) Add the egg & prawns back into the wok
7) Stir fry a little and add 1/2 tsp salt
8) Add rice and stir fry till all ingredients are well incorporated
9) Serve with spring onion

A classic fried rice recipe! Would you agree that the trick is getting the rice to just the right consistency... ideally by steaming it the day before, then leaving it in the fridge overnight?

Hi there Cloudsters, yes i have been told that leaving the rice over night will make it easier to fry the rice... but i don't usually like to eat overnight rice, hence we steam the rice the day we want to fry it :) it still tastes as good though...

Just so long as we don't dump the still-hot, just-cooked rice straight into the wok with the rest of the ingredients, presumably.
