Mini Chocolate Chip Muffin

Today we had guests at our place...and I decided to make some simple muffins to entertain my special guests...

Made a batch of mini muffins... it's simply a joy to bake for someone special... ;) I like the muffins being bite size cos even the kiddos could easily consume it quickly... *smile*

115gm butter
100gm caster sugar
2 eggs (at room temperature)
215gm Top Flour
1tsp baking powder
125ml milk
100gm chocolate rice
30gm-50gm Chocolate chip for topping
1tsp vanilla essence

Method of preparation
1) Preheat the oven to 180 degrees celcius
2) With an electric mixer, cream the butter until soft. Add sugar and beat until light and fluffy.
3) Beat in the eggs, 1 at a time.
4) Sieve together the top flour and baking powder. Fold into the butter mixture, alternating with the milk.
5) Add in the vanilla essence and chocolate rice and blend (do not overwork the mixture)
6) Divide the batter between the muffin cups. Sprinkle several choco chips on top.
7) Bake until lightly coloured, about 30mins. Let stand for 5mins before turning out.
