Mama's Kitchenette - Recipes

Banana Walnut Muffins

Ingredients (makes about 8-12 depending on the size of the muffin paper case)
150g plain flour
1.5 tsp baking powder
pinch of salt
70g golden caster sugar
115g shelled walnut meat, roughly chopped
2 large ripe bananas, mashed
5 tbsp milk
2 tbsp butter, melted
1 large egg, beaten
0.5 tsp vanilla essence

1) Place muffin paper cases in a muffin pan. Sift the flour, baking powder and salt into a bowl, add the sugar and walnuts and stir to combine
2) Place the mashed bananas, milk, butter, egg and vanilla essence in a separate bowl and mix together. Add the wet ingredients to the dry ingredients and gently stir until just combined.
3) Divide the mixture evenly between the paper cases and bake in a preheated oven, 190 degrees celcius, for 20-25mins or until risen and golden. Remove the muffins from the oven and place them on a wire rack to cool.


East Meets West Ravioli Pasta

1 part Minced Meat (pork)
2 parts Prawns (shelled and minced)
1 packet of wanton skin
Spring Onions chopped
Water chestnuts (diced)
Mushrooms (diced), you may use chinese mushrooms or shitake mushrooms
1 egg (beaten)
1 tsp sesame oil
Pinch of salt
Bottled Tomato base pasta sauce

1) Mix the minced meat with minced prawns, chopped spring onions, water chestnuts and mushrooms together with the beaten egg, sesame oil and pinch of salt into a large bowl.
2) Wrap the mixture with the wanton skin
3) Place the wanton over boiling water for approximately 3-4mins (scoop the wanton and drain off all excess water; the wanton is cooked when it all floats on the surface of the water); set the wanton aside
4) Place the tomato base pasta sauce in a saucepan and bring it to a boil
5) Pour the pasta sauce over wanton and add black pepper to taste
